Ingredient Notes, Substitutions & Additions
Greens: I love the combo of crisp romaine and the texture of tender baby spinach. However, you can use one or the other.
Nuts: You can use any type of nuts you like. Walnuts and pecans work well. You can even replace the nuts with sunflower seeds.
Additions: Goat cheese, feta cheese or even blue cheese complements this salad so well. You can also add more fruit such as blueberries, blackberries, sliced apples, or mandarin oranges.
Expert Tips
- Soak your red onion: If you want to mellow out the flavor of the red onion, soak the slices in ice water for a few minutes while you prepare the rest of the salad.
- Storage: This salad will stay fresh 2-3 days when stored in an airtight container. Store the dressing separately.
- Shortcut: Don’t want to make your own homemade poppyseed dressing? Substitute a good quality store-bought brand such as Brianna’s.
- Serve with: This salad goes well alongside chicken, steak, salmon, and shrimp. It’s also a nice balance to heavier “potluck-style” foods like casseroles. For a light lunch, pair it with a light soup.

Strawberry Salad with Poppyseed Dressing
Ingredients
For the dressing
- 1/2 cup mayonnaise
- 1 tbsp white wine vinegar or regular white vinegar
- 1 tbsp white sugar
- 1/4 cup milk
- 1/2 tsp coarse salt (sea salt, kosher salt)
- 1 tbsp poppy seeds
For the salad
- 4 cups romaine lettuce, chopped into small piecess
- 4 cups baby spinach leaves
- 1 lb. fresh strawberries, sliced about 2 cups
- 1/2 cup red onion, thinly sliced
- 1/2 cup sliced almonds
Instructions
- Toast the almonds: In a dry skillet over medium heat, add the almonds. Toast for a few minutes, stirring often, until lightly browned. Set aside to cool.
- Make the dressing: Whisk together the dressing ingredients and set aside.
- Assemble: Add lettuce, strawberries, and red onion to a serving bowl. Toss with the dressing and top with the toasted almonds.
