  • Red onion
  • Avocado
  • Cilantro
  • Mayonnaise
  • Lime juice

Ingredient Notes, Substitutions & Variations

Mayo: Add more protein to this salad by substituting the mayo for Greek yogurt.

Cooked chicken: Rotisserie chicken or leftover grilled chicken both work great. Or you can make your own easy cooked chicken breasts in a pan or in the air fryer.

Bell Peppers/Celery: Crunchy celery or colored bell peppers are a great addition for color and crunch!

  • Make ahead tip: If you want to make this chicken salad ahead of time, shred your chicken and combine it with the onion, cilantro, and mayo. Right before you are ready to serve, fold in the avocado and lime juice.

Ingredients
  

  • 4 cups rotisserie chicken, chopped or shredded
  • 1/2 cup red onion, finely chopped
  • 1-2 large avocados, diced
  • 1/2 cup cilantro, finely chopped
  • 1/2 cup mayonnaise
  • juice of two limes, more to taste about 4 tablespoons of lime juice
  • freshly ground black pepper, to taste optional

Instructions
 

  • Add: In a large bowl, add chopped chicken and all salad ingredients.
  • Mix: Mix gently until everything is combined. Add more lime juice and freshly ground black pepper, if you like.
    Note: Some people like to smash the avocado into the chicken mixture. I prefer to keep the avocado more in tact (diced). Feel free to do whatever works for you!
  • Finish: Serve immediately or chill until you are ready to serve (1-2 hours). Enjoy this chicken salad on sandwiches, wraps, with crackers, or over a bed of mixed salad greens.
