Avocado Chicken Salad Recipe
Ingredients
- 4 cups rotisserie chicken, chopped or shredded
- 1/2 cup red onion, finely chopped
- 1-2 large avocados, diced
- 1/2 cup cilantro, finely chopped
- 1/2 cup mayonnaise
- juice of two limes, more to taste about 4 tablespoons of lime juice
- freshly ground black pepper, to taste optional
Instructions
- Add: In a large bowl, add chopped chicken and all salad ingredients.
- Mix: Mix gently until everything is combined. Add more lime juice and freshly ground black pepper, if you like. Note: Some people like to smash the avocado into the chicken mixture. I prefer to keep the avocado more in tact (diced). Feel free to do whatever works for you!
- Finish: Serve immediately or chill until you are ready to serve (1-2 hours). Enjoy this chicken salad on sandwiches, wraps, with crackers, or over a bed of mixed salad greens.
