Ingredient Notes, Substitutions & Additions
Cabbage/Carrots: Shredding the veggies yourself makes for a suer crisp, fresh coleslaw. However, I’ve made this with pre-made shredded veggies and it turns out just fine, too.
Additions: More veggies are never a bad idea! Shredded jimica, sliced red bell pepper, radishes and red onions are great additions. For more crunch, add sunflower seeds, or toasted almonds or pecans.
Expert Tips
- Storage: This salad will stay fresh 2-3 days when stored in an airtight container. Store the dressing separately.
- Shortcut: Don’t want to make your own homemade poppy seed dressing? Substitute a good quality store-bought brand such as Brianna’s.
- Serve with: Since the poppy seed dressing is on the sweeter side, this cole slaw pairs well with savory meats such as BBQ chicken, fried chicken, and burgers. It’s also great on these pulled chicken sandwiches.

Easy Coleslaw with Poppy Seed Dressing
Ingredients
For the dressing
- 1/2 cup mayonnaise
- 1 tbsp white wine vinegar or regular white vinegar
- 1 tbsp white sugar
- 1 tbsp poppy seeds
- 1/4 cup milk
- 1/2 tsp coarse salt (sea salt, kosher salt)
For the cole slaw
- 6 cups purple cabbage, green cabbage, and shredded carrots mixed together (6 cups total OR 10 oz. bag of multi-colored cole slaw mix)
Instructions
- Make the dressing: Whisk together all dressing ingredients in a small bowl.
- Assemble: Add the cole slaw mix or cabbage/carrots to a serving bowl and toss with the dressing. I like to serve this right after tossing or within 1-2 hours.
