Strawberry Salad with Poppyseed Dressing

This strawberry salad with poppyseed dressing has been a longtime staple at potlucks and parties in my family! It's incredibly easy to make, and everyone is always raving about the sweet, creamy homemade dressing. It's perfect for spring, summer, and makes a pretty, elegant salad for Valentine's Day!

Ingredients
  

For the dressing

  • 1/2 cup mayonnaise
  • 1 tbsp white wine vinegar or regular white vinegar
  • 1 tbsp white sugar
  • 1/4 cup milk
  • 1/2 tsp coarse salt (sea salt, kosher salt)
  • 1 tbsp poppy seeds

For the salad

  • 4 cups romaine lettuce, chopped into small piecess
  • 4 cups baby spinach leaves
  • 1 lb. fresh strawberries, sliced about 2 cups
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup sliced almonds

Instructions
 

  • Toast the almonds: In a dry skillet over medium heat, add the almonds. Toast for a few minutes, stirring often, until lightly browned. Set aside to cool.
  • Make the dressing: Whisk together the dressing ingredients and set aside.
  • Assemble: Add lettuce, strawberries, and red onion to a serving bowl. Toss with the dressing and top with the toasted almonds.
