Chopped Strawberry Cucumber Salad
This fresh strawberry cucumber salad is the ultimate summer side salad! It’s sweet, crisp, and tossed with fresh herbs and a light balsamic dressing.

Romaine lettuce: Iceberg lettuce always makes a great chopped salad, too!
Almonds: Almonds add a nice crunch, but feel free to swap whatever nuts you like, or use a crunchy salad topping mix such as this one from Fresh Gourmet.
Feta cheese, goat cheese, or blue cheese: Add a little tang and creaminess to this salad! Add about 1/2 cup of feta, goat, or blue cheese! They pair perfectly with the sweet berries.

- Good quality olive oil: The dressing for this salad is simple with very few ingredients. The better quality ingredients you use, the better your dressing will be!
- Dressing in a jar: Place all of the dressing ingredients in a medium mason jar (I even like to use a clean pasta sauce jar!) and shake until everything is combined.
- Make ahead: This salad can easily be made up to a day ahead. Chop the strawberries, cucumber, and romaine. Add the dressing, almonds, and chopped herbs right before serving.
- Storage: With the dressing on, this salad doesn’t last too long in the fridge. However, you can store leftovers without the dressing in an airtight container for about 2-3 days.

Side for chicken, fish, and steak: This strawberry salad is so versatile. You can pair it with almost any chicken, fish, or steak dish. It’s especially good alongside salmon and shrimp skewers!
Summer BBQ parties: This salad has no mayo, so it’s perfect to bring to BBQ’s and potlucks. It’s a great picnic salad, too!
Add protein: You can easily add some grilled chicken breast to this salad and make it a healthy dinner or light lunch.

Strawberry Cucumber Salad
Ingredients
For the dressing
- 1/4 cup balsamic vinegar
- 1/4 cup extra virgin olive oil
- 1 tbsp honey
- 1/2 tsp. Dijon mustard
- 1 tsp. coarse salt (sea salt, kosher salt)
For the salad
- 4 cups strawberries, sliced
- 1 English cucumber, diced
- 3-4 cups romaine, chopped
- 1/2 cup fresh mint, finely chopped
- 1/2 cup fresh basil, finely chopped
- 1/4 cup sliced almonds
Instructions
- Make the dressing: Whisk together dressing ingredients or use a medium-sized mason jar to shake the ingredients until combined. Set aside.
- Assemble: Add romaine, strawberries, cucumber, basil, and mint to a large bowl or platter. Toss with the dressing, then sprinkle on sliced almonds.
