Ingredient Substitutions & Additions
Cherry tomatoes: I love using ripe cherry tomatoes for this recipe, but if you can find super ripe tomatoes on the vine that are in season, go for it! I also like using colorful heirloom tomatoes if I can find them.
Corn: Fresh sweet corn is a great addition to this salad!
Feta cheese: Feta fan?! Add some feta crumbles! You can’t go wrong.
Expert Tips
- Make-ahead tip: For the freshest results, prepare this salad shortly before serving. The avocado and the cucumber taste the best when served right away.
- Topping: This salad makes a nice crunchy topping for grilled chicken breasts and I’ve even put it on tacos!
- Red onion: Soak the red onion slices in a little cold water before adding them to the salad if you want milder taste.

Avocado and Cucumber Salad
Ingredients
- 2 ripe avocados, diced
- 1 lb. cherry tomatoes, cut in half see note 1
- 1 large English cucumber, diced
- 1/2 red onion, thinly sliced
- 1 tbsp extra virgin olive oil
- Juice of one lemon about 3-4 tablespoons of lemon juice
- 1/2 tsp coarse salt (sea salt, kosher salt) more to taste
- 1/2 tsp freshly ground black pepper
Instructions
- Assemble: Add avocado, tomatoes, cucumber, and red onion to a medium bowl.
- Add dressing: Drizzle on the olive oil and lemon juice. Season with salt and pepper and gently toss until everything is well coated. Serve right away.
