You’ll need the following ingredients to make this avocado, cucumber and tomato salad:

  • Avocado
  • Cherry tomatoes (or vine-ripened tomatoes)
  • English cucumber
  • Red onion
  • Olive oil
  • Lemon juice
  • Salt/pepper

Ingredient Substitutions & Additions

Cherry tomatoes: I love using ripe cherry tomatoes for this recipe, but if you can find super ripe tomatoes on the vine that are in season, go for it! I also like using colorful heirloom tomatoes if I can find them.

Corn: Fresh sweet corn is a great addition to this salad!

Feta cheese: Feta fan?! Add some feta crumbles! You can’t go wrong.

Expert Tips

  • Make-ahead tip: For the freshest results, prepare this salad shortly before serving. The avocado and the cucumber taste the best when served right away.
  • Topping: This salad makes a nice crunchy topping for grilled chicken breasts and I’ve even put it on tacos!
  • Red onion: Soak the red onion slices in a little cold water before adding them to the salad if you want milder taste.
  • Party salad: Double or triple this recipe to bring to a BBQ or potluck.

Ingredients
  

  • 2 ripe avocados, diced
  • 1 lb. cherry tomatoes, cut in half see note 1
  • 1 large English cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 tbsp extra virgin olive oil
  • Juice of one lemon about 3-4 tablespoons of lemon juice
  • 1/2 tsp coarse salt (sea salt, kosher salt) more to taste
  • 1/2 tsp freshly ground black pepper

Instructions
 

  • Assemble: Add avocado, tomatoes, cucumber, and red onion to a medium bowl.
  • Add dressing: Drizzle on the olive oil and lemon juice. Season with salt and pepper and gently toss until everything is well coated. Serve right away.

Notes
