  • Dried or fresh dill
  • Sugar
  • Sea salt/kosher salt

Ingredient Notes, Substitutions & Variations

Cucumbers: English cucumbers are perfect for this salad as they have a thin skin, small seeds, and crisp texture. I used two large cucumbers for this recipe and cut them into medium-thin slices using a sharp knife. You can also use a mandoline slicer if you want thinner, perfectly uniform slices.

Dill: Dried dill works so well in this salad, but you can absolutely use fresh dill. You can find the suggested amounts in the recipe card below.

Tomatoes: Fresh tomatoes are a wonderful addition to this salad, especially when they’re ripe and in season in the summertime.

Expert Tips

  • Make ahead tip: Prepare the salad dressing up to 1 week in advance and store it in a small mason jar in the fridge. Slice the cucumbers and onions up to a day ahead of time, keeping them in the fridge until you’re ready to toss everything together to serve this simple salad!
  • This salad is best served cold the day you make it. Because of the water content in the cucumbers, the dressing gets diluted and it doesn’t store well.

Ingredients
  

For the dressing

  • 1/2 cup sour cream
  • 3 tbsp mayonnaise
  • 3 tbsp red wine vinegar
  • 1 tbsp dried dill or 3-4 tbsp fresh dill, finely chopped
  • 1 tbsp white sugar
  • 1/4 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt or kosher salt

For the salad

  • 2 large English cucumbers, thinly sliced
  • 1/2 medium red onion, thinly sliced

Instructions
 

  • Make the dressing: In a large bowl, whisk together dressing ingredients. Taste, and season with a bit more salt, if needed.
  • Add & toss: To the same bowl, add the sliced cucumbers and onions. Toss well until cucumbers and onions are fully coated with the dressing.
    Note: If you want to control the amount of dressing in this recipe, mix the dressing in a small bowl. Add the veggies to a larger bowl and drizzle on as much (or as little) dressing as you like! Likewise, if you are making the dressing ahead of time, mix it in a bowl (or mason jar) cover it tightly, and refrigerate until you are ready to use it.
  • Chill (optional): Chill the salad for one hour or enjoy right away!
