Ingredient Notes, Substitutions & Variations
Corn: Frozen sweet corn makes this salad quick and easy but feel free to use fresh in-season sweet corn on the cob, too! Use about 5-6 ears of corn. Boil and carefully cut the corn from the cob — summertime in a bowl!
Veggies: Feel free to mix and match the veggies. I also love colored bell peppers and celery in this salad.
Avocado: A perfect addition!
Fresh herbs: Swap the basil and parsley with fresh cilantro.
Feta cheese: Use cotija cheese or omit it all together if feta is not your thing.
Expert Tips
- You can use fresh sweet corn or even canned sweet corn in a pinch. I find frozen is the easiest, and almost as good as fresh!
- This recipe is very unfussy! The ingredient measurements don’t have to be exact. Love tomatoes? Add more! Hate parsley? Add less or omit it all together! I promise, this corn salad will still be delish!
- How to serve: This salad is perfect alongside grilled meats like a steak, or BBQ chicken. It also works as a side on taco night!

Sweet Corn Salad
Ingredients
- 6 cups frozen sweet corn, thawed or 5-6 ears of fresh sweet corn, boiled and cut off the cob
- 1 pint cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/2 cup fresh basil, chopped
- 2 tbsp fresh parsley, choped
- 1/4 cup fresh lime juice juice from 2-3 limes
- 1/2 cup feta cheese crumbles can also use cotija cheese
- 2 tbsp extra virgin olive oil
- 1/2 tsp sea salt or kosher salt + more to taste
- freshly ground black pepper
Instructions
- Combine: In a large bowl, add all ingredients. Toss until well combined.
- Season: Season with salt and pepper. Taste, add more salt if needed. Cover and refrigerate until ready to serve.
