Watermelon Cucumber Salad with Feta and Mint
Ingredients
For the dressing
- 1/4 cup olive oil
- 1 tbsp lime juice
- 1 tbsp white wine vinegar regular white vinegar is fine, too
- 2 tsp honey
- 1/2 tsp coarse salt (sea salt, kosher salt)
For the watermelon salad
- 4 cups watermelon, diced See Note 1
- 2 cups cucumber, small dice
- 1/2 cup feta cheese
- 1/2 cup red onion, thinly sliced See Note 2
- 1/4 cup fresh mint leaves, finely chopped plus extra for gaarnish
Instructions
- Make the dressing: Add the olive oil, lime juice, white wine vinegar, and honey to a small mixing bowl. Whisk until well combined and season to taste with salt and set aside. You can also add all ingredients to a mason jar and shake well 🙂
- Assemble the salad: Add the diced watermelon, chopped cucumber, feta cheese, sliced red onion, and chopped mint leaves to a large mixing bowl. Drizzle over the salad dressing, and mix gently to combine.
- Finish: Transfer the salad to a large salad bowl or serving plate. Top with the extra mint leaves before serving. Note: I like to toss the salad and dressing right before I'm ready to serve it.
