Ingredients
  

  • 2 ripe avocados, diced
  • 1 lb. cherry tomatoes, cut in half see note 1
  • 1 large English cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 tbsp extra virgin olive oil
  • Juice of one lemon about 3-4 tablespoons of lemon juice
  • 1/2 tsp coarse salt (sea salt, kosher salt) more to taste
  • 1/2 tsp freshly ground black pepper

Instructions
 

  • Assemble: Add avocado, tomatoes, cucumber, and red onion to a medium bowl.
  • Add dressing: Drizzle on the olive oil and lemon juice. Season with salt and pepper and gently toss until everything is well coated. Serve right away.

Notes

Note 1: I love using ripe cherry tomatoes for this recipe, but if you can find super-ripe tomatoes on the vine that are in season, go for it! I also like using colorful heirloom tomatoes if I can find them.
