Creamy Cucumber Salad

This creamy cucumber salad is a refreshing and easy summer salad recipe that's perfect for any occasion! Made with crisp cucumbers, sliced onion, a tangy dressing of sour cream, mayonnaise, and lots of fresh dill. We love to serve this salad alongside burgers, grilled chicken, ham, and steak.

Ingredients
  

For the dressing

  • 1/2 cup sour cream
  • 3 tbsp mayonnaise
  • 3 tbsp red wine vinegar
  • 1 tbsp. dried dill or 3-4 tbsp fresh dill, finely chopped
  • 1-2 tsp. white sugar
  • 1/4 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt or kosher salt

For the salad

  • 2 large English cucumbers, thinly sliced
  • 1/2 medium red onion, thinly sliced

Instructions
 

  • Make the dressing: In a large bowl, whisk together dressing ingredients. Taste, and season with a bit more salt, if needed.
  • Add & toss: To the same bowl, add the sliced cucumbers and onions. Toss well until cucumbers and onions are fully coated with the dressing.
    Note: If you want to control the amount of dressing in this recipe, mix the dressing in a small bowl. Add the veggies to a larger bowl and drizzle on as much (or as little) dressing as you like! Likewise, if you are making the dressing ahead of time, mix it in a bowl (or mason jar) cover it tightly, and refrigerate until you are ready to use it.
  • Chill (optional): Chill the salad for one hour or enjoy right away!
