Ingredient Notes, Substitutions & Additions
The dressing: I’ve seen an interview where she says the dressing was Italian dressing and I’ve seen one where she says it’s a lemon vinaigrette. Either way, it’s delicious! You can make the lemon vinaigrette with the recipe below, or use your favorite Italian dressing (we love Ken’s Northern Italian).
Chickpeas/Garbanzo beans: Like with all of the ingredients in this salad, Jen didn’t give any measurements. She just said she didn’t like a lot of garbanzo beans. But this is your salad–add as many as you like!
Iceberg lettuce: Jen admits in the interview it has “no nutritional benefit” but I still love iceberg! Feel free to sub romaine or use a combo of both.
Expert Tips
- Customize! Jen never gave any measurements for this salad, so I developed the recipe based on my own personal taste 🙂 Feel free to add more or less of anything!
- Make-ahead tip: Iceberg lettuce doesn’t hold up quite as well as romaine, so don’t prep this salad more than a day or two in advance.

Ingredients
For the dressing
- 1/3 cup fresh lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp white sugar
- 1/2 tsp coarse salt (sea salt, kosher salt)
- 1/3 cup olive oil
- freshly ground black pepper, to taste
For the salad
- 1 head of iceberg lettuce, chopped/shredded about 6-8 cups
- 1 cup tomato, diced cherry tomatoes or Roma tomatoes
- 1/2 cup chickpeas (garbanzo beans)
- 8 oz. turkey bacon about 8-10 slices
- 1/2 cup salami, chopped
- 2 cups cooked chicken rotisserie chicken or leftover grilled chicken are great!
- 1/2 cup Percarino cheese, shredded/grated Parmesan is also fine
Instructions
- Cook bacon: I either cook the bacon slices in the air fryer at 400°F for about 10 minutes or in the oven. 🙂 Then, chop into pieces.
- Make the dressing: Whisk together the dressing ingredients and set aside. You can also add all of the dressing ingredients to a small jar and shake until combined.
- Assemble: Add all salad ingredients to a large serving bowl or plate. Drizzle on the dressing and toss. Add more cheese and freshly ground pepper if you like.
This is a perfect light and fresh lunch salad for spring and summer! Hope you love it as much as Jen did! XO ~ Casey
