La Scala Chopped Salad {Viral “Kardashian Salad”}

Kim Kardashian made this La Scala chopped salad go viral — and she’s on to something! This delicious salad is a copycat of the famous La Scala salad from the Beverly Hills restaurant. It features crisp lettuce, marinated chickpeas, salami, mozzarella, and Parmesan cheese, all tossed in a delicious mustard vinaigrette. It’s going to be one of your favorites!

Recipe Ingredients: La Scala Chopped Salad

For the dressing:

  • Olive oil
  • Red wine vinegar
  • Dijon mustard
  • Grated Parmesan cheese
  • Honey
  • Salt/pepper

For the salad:

  • Lettuce
  • Chickpeas
  • Fresh mozzarella
  • Salami
  • Shaved Parmesan
  • Black pepper

Ingredient Notes, Substitutions & Additions

Lettuce: So the “real” La Scala salad is made with iceberg lettuce and that works just fine! I love iceberg! But I typically prefer to make this salad with thinly sliced romaine. Use whatever you prefer!

Parmesan: Use good quality Parmesan cheese! If you can, use Parmigiano Reggiano. Shave it right off the block on top of the salad, and grate it finely for the dressing.

Salami: I prefer using a salami “roll” that isn’t pre-sliced (like this one). That way, you can cut the slices into thin strips just like they do at La Scala 🙂

Fresh mozzarella: You can also use shredded mozzarella cheese.

Additions: Red onion and pepperoncini are yummy additions and give this salad an Italian grinder salad vibe.

Expert Tips

  • Good quality ingredients: One of the “secrets” to a great restaurant-style salad is high quality ingredients. Especially the Parmesan and the olive oil! I love using cold pressed extra virgin olive oil. There are so few ingredients in the dressing that a good quality olive oil really shines.
  • Parmesan cheese: Use a vegetable peeler to get nice big Parmesan shavings over the top of your salad. Use a good-quality Parmigiano Reggiano if you can.
  • Storage: This salad holds up pretty well in the fridge for about 3 days. Store in an airtight container. If possible, store the salad and dressing separately.

Ingredients
  

For the dressing

  • 1/4 cup good-quality olive oil See Note 1
  • 1/4 cup red wine vinegar
  • 1/2 tbsp Dijon mustard
  • 1/4 cup Parmesan cheese, finely grated
  • 1/4 tsp honey
  • 1/4 tsp EACH coarse salt and black pepper

For the salad

  • 2-3 romaine hearts, finely chopped about 6-8 cups
  • 1/2 cup salami, diced, sliced or cut into thin strips
  • 1 cup fresh mozzarella cheese balls, halved or grated mozzarella
  • 1/2 cup garbanzo beans (chickpeas)
  • shaved Parmesan cheese shave off the block with a vegetable peeler
  • freshly ground black pepper

Instructions
 

  • Make the dressing: In a small bowl or jar with a tight-fitting lid, whisk or shake together the dressing ingredients.
    Place chickpeas in a small bowl. Add 2 tbsp. of the dressing to the chickpeas and stir to coat. The chickpeas will "marinate" while you prep the rest of the salad.
  • Assemble: Add salad ingredients to a large bowl. Add the marinated chickpeas. Drizzle with dressing. Shave off nice, big pieces of Parmesan cheese over the top of the salad. Add freshly ground black pepper and serve.
