Chopped Veggie Salad
This easy chopped salad is a summertime treat! Colorful and bursting with fresh flavors, it’s the perfect cold veggie salad for hot days. This salad can be a side dish, topping for tacos, or even serve with tortilla chips like a summer salsa – or eat it by the spoonful! No judgement!

Ingredient Notes, Substitutions & Additions
Corn: I like using frozen corn because it keeps the whole salad nice and cold. But canned corn or fresh corn work, too of course!
Bell peppers: The more colorful the peppers, the better!
Additions: I sometimes add black beans and/or black-eyed peas and it’s suddenly turned into cowboy caviar! 🙂 For a fresh, southwest twist, add chopped cilantro. Need a little spice?? Chopped fresh jalapeno is delicious in this salad.
Expert Tips
- Meal Prep/Storage: Aside from the avocado, this salad holds up really well in the fridge for 3-4 days. If you’re meal-prepping, just add the avocado when you’re ready to eat! Store the salad in an airtight container.
- Avocado: Cut and add the avocado last, for maximum freshness.
- Serving: You can serve this salad right way or pop it in the fridge for a few hours to allow the flavors to marry a bit.
- Flexible: The measurements in this chopped salad recipe are just guidelines. Feel free to be flexible and add more or less of what you like! You can’t mess it up!
How to Serve
Side dish: This salad makes a great light side dish for grilled meats. It’s great in the summertime and perfect for outdoor BBQ parties since there’s no mayo!
Topping: Use this salad as a topping for chicken or fish.
“Salsa”: My favorite way to enjoy this salad is with tortilla chips like a salsa! It’s also super yummy on tacos!

Chopped Veggie Salad
Ingredients
For the dressing
- 1/3 cup lime juice
- 3 tbsp olive oil use a good quality olive oil
- 1 1/2 tsp coarse salt (sea salt, kosher salt)
- 1 tsp sugar
For the chopped salad
- 16 oz. of frozen corn or about 2 cups
- 3/4 cup red onion, finely chopped
- 3 ribs celery, chopped
- 3 roma tomatoes, diced any tomatoes will work!
- 1 English cucumber, diced about 1 cup
- 2 colored bell peppers, diced I used orange and red
- 3/4 cup cilantro, chopped
- 2 ripe avocados, diced
Instructions
- Combine: Add all salad ingredients to a large bowl. Add lime juice, olive oil salt, and sugar and mix to combine. Season with more salt, if needed. Chill for 2-3 hours or serve right away.
