Ingredients
  

  • 4 cups rotisserie chicken, chopped or shredded
  • 1/2 cup red onion, finely chopped
  • 1-2 large avocados, diced
  • 1/2 cup cilantro, finely chopped
  • 1/2 cup mayonnaise
  • juice of two limes, more to taste about 4 tablespoons of lime juice
  • freshly ground black pepper, to taste optional

Instructions
 

  • Add: In a large bowl, add chopped chicken and all salad ingredients.
  • Mix: Mix gently until everything is combined. Add more lime juice and freshly ground black pepper, if you like.
    Note: Some people like to smash the avocado into the chicken mixture. I prefer to keep the avocado more in tact (diced). Feel free to do whatever works for you!
  • Finish: Serve immediately or chill until you are ready to serve (1-2 hours). Enjoy this chicken salad on sandwiches, wraps, with crackers, or over a bed of mixed salad greens.

Notes

Cooked chicken: Rotisserie chicken or leftover grilled chicken both work great. Or you can make your own easy, cooked chicken breasts in a pan or in the air fryer.
