This avocado chicken salad recipe is a great recipe when you need something quick, easy, healthy, and delicious! Made with rotisserie chicken, avocado, and fresh lime juice, this chicken salad is perfect to whip up for a quick lunch salad or light dinner.
juice of two limes, more to tasteabout 4 tablespoons of lime juice
freshly ground black pepper, to tasteoptional
Instructions
Add: In a large bowl, add chopped chicken and all salad ingredients.
Mix: Mix gently until everything is combined. Add more lime juice and freshly ground black pepper, if you like. Note: Some people like to smash the avocado into the chicken mixture. I prefer to keep the avocado more in tact (diced). Feel free to do whatever works for you!
Finish: Serve immediately or chill until you are ready to serve (1-2 hours). Enjoy this chicken salad on sandwiches, wraps, with crackers, or over a bed of mixed salad greens.
Notes
Cooked chicken: Rotisserie chicken or leftover grilled chicken both work great. Or you can make your own easy, cooked chicken breasts in a pan or in the air fryer.
