Watermelon Cucumber Salad with Feta and Mint

This watermelon cucumber salad with feta and mint is the perfect refreshing summer side dish! Ingredients
  

For the dressing

  • 1/4 cup olive oil
  • 1 tbsp lime juice
  • 1 tbsp white wine vinegar regular white vinegar is fine, too
  • 2 tsp honey
  • 1/2 tsp coarse salt (sea salt, kosher salt)

For the watermelon salad

  • 4 cups watermelon, diced See Note 1
  • 2 cups cucumber, small dice
  • 1/2 cup feta cheese
  • 1/2 cup red onion, thinly sliced See Note 2
  • 1/4 cup fresh mint leaves, finely chopped plus extra for gaarnish

Instructions
 

  • Make the dressing: Add the olive oil, lime juice, white wine vinegar, and honey to a small mixing bowl. Whisk until well combined and season to taste with salt and set aside. You can also add all ingredients to a mason jar and shake well :)
  • Assemble the salad: Add the diced watermelon, chopped cucumber, feta cheese, sliced red onion, and chopped mint leaves to a large mixing bowl.  Drizzle over the salad dressing, and mix gently to combine.
  • Finish: Transfer the salad to a large salad bowl or serving plate.  Top with the extra mint leaves before serving. Note: I like to toss the salad and dressing right before I'm ready to serve it.

Notes

Note 1: I love this video on how to easily dice a watermelon!
Note 2: Soak the red onion in ice water for a few minutes for a more mild flavor. I like to do this if I'm taking this salad to a party!
