This watermelon cucumber salad with feta and mint is the perfect refreshing summer side dish! This simple, healthy, and fresh dish combines juicy watermelon, crisp cucumber, creamy feta, and fragrant mint...all drizzled with a honey lime vinaigrette. It's the ultimate salad for summer days or as a standout summer dinner party dish.
1tbspwhite wine vinegarregular white vinegar is fine, too

1/2tspcoarse salt (sea salt, kosher salt)
For the watermelon salad
4cupswatermelon, dicedSee Note 1
2cupscucumber, small dice
1/2cupfeta cheese
1/2cupred onion, thinly slicedSee Note 2
1/4cupfresh mint leaves, finely choppedplus extra for gaarnish
Instructions
Make the dressing: Add the olive oil, lime juice, white wine vinegar, and honey to a small mixing bowl. Whisk until well combined and season to taste with salt and set aside. You can also add all ingredients to a mason jar and shake well :)
Assemble the salad: Add the diced watermelon, chopped cucumber, feta cheese, sliced red onion, and chopped mint leaves to a large mixing bowl. Drizzle over the salad dressing, and mix gently to combine.
Finish: Transfer the salad to a large salad bowl or serving plate. Top with the extra mint leaves before serving. Note: I like to toss the salad and dressing right before I'm ready to serve it.

Note 1: I love this video on how to easily dice a watermelon!Note 2: Soak the red onion in ice water for a few minutes for a more mild flavor. I like to do this if I'm taking this salad to a party!
