The Real Jennifer Aniston Salad {Cobb Salad}

The "Jennifer Aniston Salad" took Instagram and TikTok by storm. But did you know that's not the REAL Jennifer Aniston salad?! Nope! Jen and her "Friends" cast mates actually enjoyed THIS pseudo cobb salad almost every day on the set of Friends.

Ingredients
  

For the dressing

  • 1/3 cup fresh lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp white sugar
  • 1/2 tsp coarse salt (sea salt, kosher salt)
  • 1/3 cup olive oil
  • freshly ground black pepper, to taste

For the salad

  • 1 head of iceberg lettuce, chopped/shredded about 6-8 cups
  • 1 cup tomato, diced cherry tomatoes or Roma tomatoes
  • 1/2 cup chickpeas (garbanzo beans)
  • 8 oz. turkey bacon about 8-10 slices
  • 1/2 cup salami, chopped
  • 2 cups cooked chicken rotisserie chicken or leftover grilled chicken are great!
  • 1/2 cup Percarino cheese, shredded/grated Parmesan is also fine

Instructions
 

  • Cook bacon: I either cook the bacon slices in the air fryer at 400°F for about 10 minutes or in the oven. :) Then, chop into pieces.
  • Make the dressing: Whisk together the dressing ingredients and set aside. You can also add all of the dressing ingredients to a small jar and shake until combined.
  • Assemble: Add all salad ingredients to a large serving bowl or plate. Drizzle on the dressing and toss. Add more cheese and freshly ground pepper if you like.
