This coleslaw with poppy seed dressing is a nice little twist on the classic coleslaw recipe you know and love. With its creamy texture and slightly sweet poppyseed dressing, it’s the perfect side dish for picnics, barbecues, or cozy fall dinners.

Ingredients
  

For the dressing

  • 1/2 cup mayonnaise
  • 1 tbsp white wine vinegar or regular white vinegar
  • 1 tbsp white sugar
  • 1 tbsp poppy seeds
  • 1/4 cup milk
  • 1/2 tsp coarse salt (sea salt, kosher salt)

For the cole slaw

  • 6 cups purple cabbage, green cabbage, and shredded carrots mixed together (6 cups total OR 10 oz. bag of multi-colored cole slaw mix)

Instructions
 

  • Make the dressing: Whisk together all dressing ingredients in a small bowl.
  • Assemble: Add the cole slaw mix or cabbage/carrots to a serving bowl and toss with the dressing. I like to serve this right after tossing or within 1-2 hours.
