This easy chopped salad is a summertime treat! Colorful and bursting with fresh flavors, it's the perfect cold veggie salad for hot days. This salad can be a side dish, topping for tacos, or even serve with tortilla chips like a summer salsa - or eat it by the spoonful! No judgement!

Ingredients
  

For the dressing

  • 1/3 cup lime juice
  • 3 tbsp olive oil use a good quality olive oil
  • 1 1/2 tsp coarse salt (sea salt, kosher salt)
  • 1 tsp sugar

For the chopped salad

  • 16 oz. of frozen corn or about 2 cups
  • 3/4 cup red onion, finely chopped
  • 3 ribs celery, chopped
  • 3 roma tomatoes, diced any tomatoes will work!
  • 1 English cucumber, diced about 1 cup
  • 2 colored bell peppers, diced I used orange and red
  • 3/4 cup cilantro, chopped
  • 2 ripe avocados, diced

Instructions
 

  • Combine: Add all salad ingredients to a large bowl. Add lime juice, olive oil salt, and sugar and mix to combine. Season with more salt, if needed. Chill for 2-3 hours or serve right away.
