Easy Dijon Vinaigrette

This easy Dijon vinaigrette dressing is my go-to for everyday salads because it comes together in just minutes and tastes amazing on just about anything. With its balanced tang and simple ingredients, it’s the kind of homemade dressing you’ll want to keep stocked in your fridge!

Recipe Ingredients: Dijon Vinaigrette

  • Extra virgin olive oil
  • Dijon mustard
  • Garlic
  • White wine vinegar
  • Sugar, honey or maple syrup
  • Salt

Ingredient Notes & Substitutions


Extra virgin olive oil: EVOO is my preference for a bold, rich taste, but avocado oil or grape seed oil will give a more neutral flavor.

Sugar/honey/maple syrup: Just a bit of sweetness balances out the acidity of the vinegar and is a MUST for me in most vinaigrettes.

Vinegar: White wine vinegar will give that classic, restaurant taste, but you can also use red wine vinegar, apple cider vinegar, Champagne vinegar, or lemon juice. I’ve even used plain old white distilled vinegar, too!

Expert Tips

  • Use good-quality olive oil: Since there are so few ingredients, a good extra virgin olive oil really makes this dressing shine.
  • Grate the garlic: A microplane or grater helps the garlic melt into the dressing instead of leaving sharp chunks.
  • Balance to taste: Everyone’s preference is different, so feel free to adjust! Add more sweetness with a bit more sugar, honey or maple syrup, or tone down acidity with a little more olive oil. Make it your own!
  • Shake shake shake: My favorite way to make this dressing is in a glass jar. Not only does it make mixing the dressing super easy, it’s also great for storing any leftovers.
  • Storage: Store the classic Dijon vinaigrette in an airtight jar or container in the refrigerator for up to 5–7 days. Just give it a good shake before using, since the oil and vinegar naturally separate over time.

How to use this delicious dressing!

Salads: Drizzle it over green salads, grain salads, and it even makes a great pasta salad dressing! A drizzle of this dressing also makes plain old mixed greens something special.

Roasted veggies: Toss with roasted cauliflower, sweet potatoes, or carrots for a healthy side dish. It’s also super yummy drizzled over roasted potatoes.

Meat marinade: The Dijon and vinegar help tenderize while adding great flavor.

Dipping: Use it like an herby oil and vinegar dip for dipping crusty bread.

Ingredients
  

  • 1/2 cup good-quality extra virgin olive oil
  • 1 tbsp. Dijon mustard
  • 1-2 small garlic cloves, grated
  • 4 tbsp. white wine vinegar can also use red wine vinegar, apple cider vinegar, Champagne vinegar, or lemon juice
  • 1/2 tsp. sugar, honey, or maple syrup
  • 1/2 tsp. coarse salt (sea salt, kosher salt)

Instructions
 

  • Make the dressing: Add all dressing ingredients to a jar or bowl. Shake and or whisk until well-combined. Refrigerate until ready to use.
