This citrus ginger dressing combines fresh ginger, bright citrus flavors, and a touch of sweetness from honey. It's perfect on crunchy salads like cole slaw, green salads, and especially this chopped kale "detox salad!"

Ingredients
  

  • 1/4 cup lemon juice 2 lemons
  • 1/4 cup orange juice + 2 tsp orange zest about 1 orange
  • 1/4 cup avocado oil or olive oil
  • 1 tsp peeled fresh ginger, grated
  • 1 tbsp honey you can add a bit more for more sweetness-sometimes this depends on how sweet your orange is
  • 1 tsp dijon mustard
  • 1/8 tsp EACH coarse salt and black pepper

Instructions
 

  • Mix: In a small bowl, whisk dressing ingredients together until well combined. You can also add all of these ingredients to a small jar and shake!
  • Serve or store: Serve over this chopped kale salad or your favorite salad! Or store in an airtight container in the fridge for up to two weeks.
