Ingredient Notes, Additions & Substitutions

Salad dressing: It takes just a minute to whip up this delicious balsamic dressing. However, if you a serving a crowd, you might want to offer several different bottled dressings, too, and let your guests choose.

Fresh mozzarella balls: These are also called ciliegine, and they’re about the size of a cherry tomato. They can typically be found in the deli or cheese section at the grocery store.

Expert Tips

  • Mozzarella skulls: They are so easy and fun to make! Instructions are below in the recipe or here: How to make mozzarella skulls.
  • Dressing in a jar: Place all of the dressing ingredients in a medium mason jar (I even like to use a clean pasta sauce jar!) and shake until everything is combined.
  • Make ahead: This salad can easily be made up to a day ahead. Slice the tomatoes and carrots, make the mozzarella skulls and dressing, then assemble the salad the day of your party.
  • Storage: With the dressing on, this salad doesn’t last too long in the fridge. However, you can store leftovers without the dressing in an airtight container for about 2-3 days.

How to serve

Festive black platter: Arrange the salad on a black or festive Halloween platter to make the greens and orange carrots pop.

Clear plastic cups or mini mason jars: Serve the salad in individual servings that look great on a festive table! Make sure to top each one with a spooky mozzarella skull!

In a cauldron-style serving bowl: How fun would this salad be in a cauldron?? Add creepy garnishes like plastic spiders (for decor only!), black olives cut to look like spiders, and lots of mozzarella skulls!

Equipment

Ingredients

For the salad

  • 6-8 cups mixed greens
  • 16-20 fresh mozzarella balls
  • 1 cup cherry tomatoes, halved
  • 1 large carrot, shaved with a vegetable peeler into thin ribbons
  • fresh black pepper

For the dressing

  • 1/4 cup balsamic vinegar
  • 2/3 cup extra virgin olive oil
  • 1 tbsp Dijon mustard
  • 1/2 tsp. sugar
  • 1/2 tsp. soy sauce
  • 1/4 tsp. sea salt or kosher salt, to taste

Instructions

  • Make the dressing: In a small bowl or medium-sized jar, add the dressing ingredients. Whisk or shake until combined. Set aside.
  • Make the mozzarella skulls: Preheat oven to 350°F. Make sure each mozzarella ball is free from moisture by blotting with a paper towel. Then, place one mozzarella ball in each mold.
Bake at 350°F for 8-10 minutes or until just soft enough to spread. With the back of a spoon, press the softened mozzarella into the mold, pressing down gently.
Refrigerate for about 10 minutes or until cool, then carefully unmold each skull.
Note: For detailed instructions and step-by-step photos, go to this post: How to make mozzarella cheese skulls.
  • Assemble the salad: While your skulls are cooling, assemble the salad. To a large bowl or serving platter, add mixed greens, cherry tomatoes, and carrot shavings. Place mozzarella skulls decoratively around the salad. Finish by drizzling on the dressing and adding freshly ground black pepper.
