This creamy elote dressing (or Mexican street corn dressing)โ€”is a rich and flavorful addition to your favorite dishes! This creamy homemade sauce works perfectly as a taco salad dressing, drizzle for burritos, or topping for tacos. Inspired by the bold flavors of street corn, itโ€™s also the perfect dressing for this Mexican street corn pasta salad!

Ingredients
  

  • 1/2 cup Greek yogurt can also use 1/4 cup mayo + 1/4 cup sour cream
  • 3 tbsp lime juice
  • 1/2 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/8 tsp red pepper flakes optional
  • 1/8 tsp EACH coarse salt and black pepper
  • 1/2 cup cotija cheese See Note 1

Instructions
 

  • Combine: All all ingredients in a small bowl and whisk to combine. Taste, and season with more salt if needed.
  • Enjoy or store: Use right away or store in an airtight container or small mason jar in the fridge for up to 5 days.

Notes

Note 1: If you plan to use this as a salad dressing (such as in this elote pasta salad), you can choose to sprinkle the cojita cheese over the top of the salad OR stir it into the dressing (or both!) If you plan to use this as a sauce for tacos or burritos, add the cotija cheese directly to the dressing/sauce.
