This fresh and rustic chopped Greek salad is loaded with the classic Greek flavors of crunchy cucumbers, tomatoes, olives, feta, oregano, and fresh mint. This salad is light and healthy- perfect for summer! It's super easy to make, and I love it for a quick, healthy side dish!
1English cucumber, dicedor 7-8 mini Persian cucumbers
1cupcherry tomatoes, halved
1red bell pepper, chopped
1/2cupred onion, chopped
1/2cup kalamata olives, sliced
1/2cupfeta cheese, crumbled
1/4cupfresh mint leaves, chopped
Instructions
Make the dressing: In a small bowl add the oil, red wine vinegar, oregano, garlic, salt and pepper. Whisk until combined.Â
Assemble: To a large bowl, add the vegetables, olives, feta cheese, and mint. Toss with the dressing until combined. Refrigerate for an hour or two or serve right away.
