This Chick-fil-A Market Salad recipe is an easy copycat salad packed with chicken, fresh berries, and tangy apple cider vinaigrette. It's a great dinner salad, lunch salad, meal prep...and will save you a ton vesus going to Chick-fil-A!
1lb. boneless, skinless chicken breasts2 small to medium-sized chicken breasts (see Note 1). You can also use rotisserie chicken or grilled chicken.
1tbspolive oil
salt/pepper
1head romaine lettuce, choppedor 2-3 romaine hearts, See Note 2
2cups baby spinachSee Note 2
1apple, dicedI like Granny Smith, but any type is fine
8strawberries, quartered
1cupfresh blueberries
1/2 cup sliced almonds
1/3cupblue cheese or feta cheese, crumbled
2-3tbspunsweetened granola, OPTIONALSee Note 3
For the apple cider dressing
4tbspolive oil
4tbspapple cider vinegar
2tbsphoney
1/4tsponion powder
1/2tspcoarse salt (sea salt, kosher salt)
1/4tsp black pepper
Instructions
Cook the chicken: Season chicken breasts generously on both sides with salt and pepper.In a skillet over medium-high heat, add olive oil. When the oil is hot, add chicken breasts. Cook chicken breasts on the first side for about 6 minutes or until golden brown. Flip, and cook on the second side for 2-3 minutes until juices run clear or the internal temperature reaches 165°F. Transfer chicken to a plate. When cool, slice into strips.
Assemble the salad: In a large serving bowl, add romaine/spinach/mixed greens. Top the greens with apples, strawberries, blueberries, almonds, cheese, and sliced chicken.
Toss: Drizzle with the dressing and toss well. Enjoy right away.
Notes
Note 1: If you chicken breasts are not uniform in thickness, place them between two sheets of plastic wrap and pound them out to even thickness. This will ensure quick and easy cooking. See more tips on cooking perfect chicken breasts in a pan in this post. Note 2: In place of the romaine. + spinach, you can also use about 8 cups of mixed greens. Note 3: The original Chick-fil-A salad includes granola for crunch. I personally think it's not necessary given the sweetness of the fruit and dressing. However, if you can find a good unsweetened granola, feel free to add it in for extra crunch. You can also use a salad topping mix like this one.
