If you love the Chick fil-A kale crunch salad, here's your copycat recipe that's just like the real thing! It is a crunchy mix of kale, cabbage and salted roasted almonds. The star of the show is the dressing which is an apple cider mustard dressing sweetened with honey. This salad could not be easier to make and comes together in about 10 minutes making it the perfect, easy side salad.
1/2cup + 1 tbspavocado oil, canola oil, or a light olive oil
1/4cup apple cider vinegar
3tsplemon juice
2tbspDijon mustard
1/4cup honey
1/4tspcoarse salt (sea salt, kosher salt)
Instructions
Make the dressing: In a glass mixing cup or jar add 1/2 cup of the oil, lemon juice, mustard, vinegar, honey, and salt. Whisk or shake to combine. Set aside.
Massage the kale (OPTIONAL STEP): Place kale in a serving bowl, drizzle with the remaining 1 tbsp of oil and a sprinkle of salt. With clean hands, "massage" the kale, working the olive oil and salt into the kale. Do this for a minute or so until the kale begins to get a bit soft and tender.
Assemble: To the bowl with the kale, add the cabbage. Drizzle with the dressing and top with the roasted almonds. Serve right away!
