Ingredients

For the salad

  • 3-4 cups kale leaves, finely chopped I like using baby kale. Be sure to remove any tough stems.
  • 2 cups cabbage, thinly sliced
  • 1/2 cup roasted, salted almonds such as these

For the dressing

  • 1/2 cup + 1 tbsp avocado oil, canola oil, or a light olive oil
  • 1/4 cup apple cider vinegar
  • 3 tsp lemon juice
  • 2 tbsp Dijon mustard
  • 1/4 cup honey
  • 1/4 tsp coarse salt (sea salt, kosher salt)

Instructions

  • Make the dressing: In a glass mixing cup or jar add 1/2 cup of the oil, lemon juice, mustard, vinegar, honey, and salt. Whisk or shake to combine. Set aside.
  • Massage the kale (OPTIONAL STEP): Place kale in a serving bowl, drizzle with the remaining 1 tbsp of oil and a sprinkle of salt. With clean hands, "massage" the kale, working the olive oil and salt into the kale. Do this for a minute or so until the kale begins to get a bit soft and tender.
  • Assemble: To the bowl with the kale, add the cabbage. Drizzle with the dressing and top with the roasted almonds. Serve right away!
